La Galerie des Pains

In a village where craftsmen have always had their place alongside artists, Guillaume Potherat carries on a demanding craft. A Compagnon du Devoir, heir to a long tradition of French trade guilds, he chose Barbizon in 2009 to set up his bakehouse, working with flour from Moulins Bourgeois, where he was once a demonstrator himself. The name is no accident: every loaf here is treated as a work in its own right, with its own proportions, slow fermentations and aromas.
